Country Pasta with Mozzarella
- 8 oz uncooked rigatoni
- 8 slices bacon, cut into 1 inch pieces
- 2 cups broccoli flowerets
- 1/2 tsp. fresh garlic, minced
- 2 cups shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- Pinch of cayenne pepper
- 1/4 cup fresh parsley, chopped
Cook your rigatoni according to the package directions and drain water from the pot when finished. Meanwhile in a large skillet cook the bacon over medium high heat until slightly crispy. Reduce your heat to medium and add the broccoli and garlic. Continue to cook, stirring occasionally, for 4 to 5 minutes or until the broccoli is crisply tender. Add the pasta and other remaining ingredients to the skillet EXCEPT the parsley. Cook for another 3 to 5 minutes or until the cheese has melted. Sprinkle the pasta meal with parsley and serve.
